Stovetop Bacon Barbecue Chicken

EASY

This dish is super easy to prepare. Because it’s cooked indoors, you can enjoy it any time of the year in any weather. Try Potato Salad (p. 170) as a summer accompaniment or Potatoes O’Brien (p. 262) when the weather turns chilly.

Per serving:

A 4–5-ounce boneless, skinless chicken thigh

1 slice bacon

1 tablespoon barbecue sauce

1 tablespoon honey

Open the chicken thigh out and wrap the bacon around it, beginning and ending on the same side. Place in a small cast iron frying pan and fry, covered, over medium low heat until both sides are deep golden brown and the bacon is cooked through, about half an hour, turning occasionally. Combine the honey and barbecue sauce, pour over the chicken in the hot pan, and cook for just a minute longer, until the sauce caramelizes and glazes the chicken. Serve at once.
